- Chemical Formula
- (C₃H₅O₃)₂Mg · 2H₂O
Introduction
Magnesium lactate dihydrate is produced by complete neutralisation of lactic acid with a high purity magnesium source and subsequent precipitation. Magnesium lactate is mainly used as mineral source in food and beverages, food supplements, foods for particular nutritional purposes, and pharmaceutical preparations. Due to its neutral taste and high solubility, it is the magnesium salt of choice for mineral fortified liquid applications. As an organic mineral, it is preferred over inorganic sources because of its superior bioavailability and physiological compatibility.
Magnesium lactate is supplied as a white or almost white crystalline powder. It has a neutral taste, is practically odourless and has a good solubility in water (84g/l).

In the USA, magnesium lactate can be added to foodstuff for fortification. Jungbunzlauer magnesium lactate is self-affirmed Generally Recognized as Safe (GRAS) up to 20% of the daily value (DV) of magnesium when used in fortified food and beverages and in full compliance with the US Food and Drug Administration (FDA). It can be added as a favouring agent in beverage, beverage powders and dairy alternatives at a level up to 0.25%.
In the Codex Alimentarius magnesium lactate is listed as food additive and additive permitted for use in food in general, unless otherwise specified, in accordance with GMP.
