A key aspect is reducing sugar consumption, as excessive intake has been linked to various health issues such as obesity, diabetes, and heart disease. For health-conscious individuals, finding a balance between enjoying flavourful foods and prioritising well-being is crucial, with sugar reduction playing a pivotal role in achieving this equilibrium.

ERYLITE®Erythritol naturally made through fermentation

ERYLITE® Erythritol is a natural sugar substitute from the polyol family that does not impact blood sugar levels or adds calories to the diet. Erythritol, naturally occurring in certain fruits and fermented foods, offers approximately 60% of the sweetness of sugar. The body easily absorbs erythritol, which is excreted via the kidneys without being metabolised, making it non-glycaemic, non-insulinemic, and well-tolerated without gastrointestinal side effects (den Hartog et al., 2010). Studies have shown that erythritol promotes oral health benefits. With a texture similar to sugar, ERYLITE® Erythritol is an excellent choice for sauces and dressings.

Sauces and dressings with ERYLITE®Erythritol 

Sauces and dressings often rely on sugar for texture and sweetness. Erythritol serves as an ideal alternative, offering sweetness and maintaining consistency without the negative effects of sugar. Stable under various processing conditions, including heat and acidity, erythritol enhances the natural flavours of sauces and dressings without overpowering them. For example, the typical sugar content in a sauce like ketchup is 21%, contributing to approximately 75% of the caloric value (Innova Market Insights, June 2024). By replacing sugar with ERYLITE® Erythritol, these calories can be saved, providing a significant advantage over other polyols that deliver a higher calorie contribution. ERYLITE®  Erythritol can partially or completely replace sugar and can be combined with other sweeteners like Stevia to balance taste profiles and sweetness levels.

Regulatory approvals and sustainability proposition for Jungbunzlauer ERYLITE® Erythritol

ERYLITE® Erythritol has received approvals from regulatory bodies such as the US FDA as a Generally Recognized as Safe (GRAS) food additive with no specific daily intake limit defined. Whereas a use level of 15% in sauces and dressings for application as food additive is common, for usage as flavouring erythritol is listed with up to 2.5% in regards of FEMA GRAS (FMP, FEMA 4819).

The European Food Safety Agency (EFSA) approves erythritol as food additive with the E-number E968. It can be used in sauces and dressings at quantum satis for sugar reduced alternatives (Regulation (EC) No. 1333/2008, Annex II, 12.6). However, for high intense sweeteners like Stevia, there are different application limits set compared to Erythritol. In the EU 120 mL/L Stevia is permitted when used in sauces and dressings, whereby an exception is made for soya sauces, in which a higher stevia content of 175 mL/L is permitted. In addition, Stevia used as flavouring in sweet sauces is permitted up to 20 to 30 ppm in regards of FEMA GRAS.

Besides Jungbunzlauer’s commitment to SBTi to support meeting the goals of the Paris agreement, several measures contribute to a manufacturing of ERYLITE® Erythritol in a more sustainable way.

The natural and renewable raw material glucose is strictly made of non-GM maize, the majority of which is sourced locally. ERYLITE® Erythritol is produced by the natural process of fermentation, no chemicals are used in the recovery and purification process. The production processes are optimised to minimise waste.
