Introduction

Monomagnesium citrate is a monobasic salt of citric acid with a molar ratio of 1:1. It is produced by partial neutralisation of citric acid with a high purity magnesium source and subsequent crystallisation.

Monomagnesium citrate is used as mineral source in functional food, beverages, food for particular nutritional purposes, and food supplements. Due to its pleasant sour taste and high solubility, it is the magnesium salt of choice for mineral fortified beverages. As an organic mineral, it is preferred over inorganic sources because of its superior bioavailability and physiological compatibility.

The properties of this partial neutralised salt are based on its intermediate position between citric acid and the neutral trimagnesium citrate. Therefore, it can be used as mild acidifier, for example if citric acid is considered to be too aggressive or hygroscopic and acts as a magnesium source at the same time.

Monomagnesium citrate is supplied as a white or almost white crystalline powder. It has a sour taste, a good solubility in water and dissolves quickly.
