Jungbunzlauer at IFFA 2016
IFFA is the leading international trade fair for processing, packaging and sales in the meat industry, an industry which has shown to be a very dynamic growth market. The consumption of meat and poultry is growing globally while, at the same time, the numbers of food regulations and consumers’ health and safety concerns have increased. As for many food processors, the framework turned out to be favourable, yet challenging.
Jungbunzlauer will exhibit at IFFA for the second time. With our range of ingredients covering process stages from breeding through slaughtering to processing we meet some of the top themes in the meat and poultry industry: food safety, environmental awareness as well as health protection, without compromising on sensory aspects.
Jungbunzlauer’s lactic, gluconic and citric acids act as safe preservatives while our special citrates are highly bioavailable calcium, magnesium, potassium and zinc sources for the mineral fortification of feed. Our citric and lactic acids are effective salmonella and E. coli control agents in antimicrobial wash systems, thereby supporting good hygienic slaughtering practices and ensuring safety of fresh meat.
Our lactates, diacetates and blends thereof allow an excellent listeria control and an extended shelf life in processed meat products for high safety and less wasting of food. Citrates and gluconates contribute to phosphate reduction thanks to their stabilising properties while Glucono-delta-Lactone serves as a mild tasting curing accelerator.
As sodium reduction remains a top trend in meat and poultry products, our sub4salt® range, with or without nitrite and our new sodium free potassium lactate / potassium acetate blend have been gaining momentum where reducing sodium further has become a challenge. Combining potassium lactate blends with sub4salt® or sub4salt® cure enables a sodium reduction of more than 50%, but with all the flavour and texture of full sodium products.
In addition to their direct uses in breeding, slaughtering and meat processing, Jungbunzlauer ingredients also contribute to make cleaners and sanitisers used in farms, slaughterhouses and processing equipment not only effective, but also environmentally friendlier and safer.
