Added calcium salts may provoke fouling deposits during processing of dairy and infant formula. These deposits may lead to lower throughput, increased cleaning times and intervals as well as deterioration of the equipment.
This technical paper investigates three important calcium salts used for fortification of dairy and infant formula. Additionally the effect of the pH regulator tripotassium citrate is analysed to determine its ability to decrease unwanted fouling deposits during heat treatment.
The best results were achieved with Jungbunzlauer’s highly bioavailable organic tricalcium citrate M2090 alone and especially in combination with Jungbunzlauer tripotassium citrate as a buffering Agent.
