Characteristics
ESSICCUM® and ESSICCUM® K are stable, water soluble, white crystalline powders.
A 12 % solution ESSICCUM® and ESSICCUM® K taste like ordinary vinegar. ESSICCUM® and ESSICCUM® K their self are 8-times more concentrated than vinegar. This relation, however, can vary from one foodstuff to another and should be established anew for each application.
Because of its hygroscopicity, care should be taken to blend ESSICCUM® only with dry substances to prevent possible acetic acid release that might cause lumps and discoloration.
As ESSICCUM®'s free acetic acid content inhibits growth of many deleterious micro-organisms it increases shelf life of blends and as well as of the finished products.
