Jungbunzlauer’s innovative food solutions at IFT15

At this year’s IFT, more than 20,000 of the world’s leading food science and technology professionals, which represent the most prominent organizations in the global food sector, will attend to learn about the latest global food trends as well as the products and innovations designed to address them. The IFT is Jungbunzlauer’s largest tradeshow in the U.S. and our reoccurrence continues to establish our strong presence in the global food sector. Jungbunzlauer will be displaying two main demos at this year’s show. Tasty reduced sodium chicken nuggets and an indulgent reduced sugar ice cream, in addition to mineral fortified giveaways.

The reduced sodium chicken nuggets with two dipping sauces will address sodium reduction. The chicken nuggets contain Jungbunzlauer’s sub4salt® which represents an effective solution for sodium reduction in processed meat products. More than 35% sodium reduction can be achieved by simply replacing salt with Jungbunzlauer’s sub4salt®. By combining our lactate/diacetate blends with the sodium reduced curing salt called sub4salt® cure a sodium reduction of up to 50% can be achieved with no compromise in taste. In addition, each dipping sauce contains lactic acid for flavor and preservation, xanthan gum for viscosity and cling and sub4salt® for sodium reduction and flavor.
The indulgent reduced sugar ice cream is naturally sweetened with ERYLITE® Stevia, which helps overcome the challenges of sugar reduction with no compromise on taste. ERYLITE® Stevia is an inseparable blend of erythritol and Reb-A which achieves a sugar-like taste without the use of flavors or masking agents. Additionally, Jungbunzlauer’s xanthan gum is utilized to improve texture and mouthfeel as well as to control ice crystal formation.

The two giveaways this year showcasing the benefit of mineral fortification will be “Boost your mind” shots and fortified gummies. The shots promote normal cognitive function, tiredness and fatigue reduction, plus a normal energy-yielding metabolism! We have added 50% of the RDA of magnesium and 50% of the RDA of zinc in 2 ounces, by using our fully reacted and non-GMO trimagnesium citrate anhydrous and zinc citrate dihydrate. The gummies are fortified with our micronized tricalcium citrate providing 25% of the RDA of calcium per gummy.
